
Boulder sandwich fans could soon have a lot more elbow room. Zodiac Subs, the New York-style sub shop that launched in 2020, is planning a second and larger downtown location at 2052 Broadway, Suite 101, with an early spring 2026 opening targeted, pending municipal approval.
The expansion was highlighted in a food plan review filing and featured in WhatNow. In that coverage, owner John Aquino said, “This space allows us to better serve the community, offer more room for guests, and expand our presence as a second addition within the city.”
From Takeout To Tables
Zodiac Subs started in 2020 in a compact Arapahoe Avenue storefront that leaned hard into takeout and delivery, according to Zodiac Subs. The new Broadway address has a bit of a café past, too, and has hosted small coffee shops in recent years, including Astro Coffee Bar, per local listings on MapQuest.

In its rundown of the plans, WhatNow highlights Zodiac’s zodiac-themed subs, like the “My Way or The Highway,” loaded with turkey, bacon, and ranch, and the “Traveler Roast Beef.” The report also notes the shop’s tongue-in-cheek menu line that its tuna sandwich “is not a Pisces,” and reiterates that Aquino is aiming for an early-spring 2026 opening, subject to city approval.
Downtown Context
If it opens as planned, the Broadway spot will join a steady churn of lunch-hour cafés and sandwich shops lining downtown. Local listings show 2052 Broadway has hosted brief coffee concepts such as Astro Coffee Bar, according to Workmode.
