Carrie’s Crispies, the West Allis shop famous for over-the-top rice crispy treats, is angling for a bigger stage. The dessert spot has proposed a move to a larger storefront on West National Avenue that would add a small production kitchen and expanded retail area, with the plan set to go before the West Allis Plan Commission on Wednesday, March 25.
Relocation plan at a glance
According to the Milwaukee Journal Sentinel, owners Carrie and Brian Cieslak want to relocate into a roughly 2,000-square-foot, two-level building at 8801 W. National Ave. Their proposal calls for renovating the site to house a small-scale commercial kitchen and a larger retail zone. City filings included with the application state that the building most recently operated as a dental office and outline proposed production and retail hours for the new location.
About the building
Commercial listings show 8801 W. National Ave has been marketed as a medical or office property that previously held a dental practice. LoopNet lists the building at about 2,366 square feet and provides photos along with parcel and tax information for the address.
From farmers market to storefront
Carrie’s Crispies started out behind a booth instead of a bakery case, launching as a farmers-market vendor in 2015 and opening its first brick-and-mortar shop in 2020, as profiled by TMJ4. The business is run by husband-and-wife team Carrie and Brian Cieslak. The shop’s website lists its current Becher Street address and retail hours of Wednesday–Friday 11 a.m.–5 p.m. and Saturday 11 a.m.–3 p.m. It also notes that about 20–25 flavors are typically on offer at any given time, even though the owners have developed more than 100 flavor ideas overall.
Hours, production plan and timeline
The city application, cited by the Journal Sentinel, lays out proposed production hours of Monday–Friday 8 a.m.–9 p.m. and weekends 8 a.m.–5 p.m. Retail hours would mirror the current schedule. The documents state that renovations could begin in summer 2026, with completion anticipated by fall 2026 if the commission grants approval. The expanded setup is intended to give the Cieslaks more capacity for bulk and event orders as demand keeps climbing.
What comes next
The West Allis Plan Commission meets at City Hall and posts its agendas and meeting packets through the city’s online Legistar system. The commission’s decision on Wednesday will determine whether the Carrie’s Crispies project advances to the Common Council or heads back for revisions. The proposal is part of a broader wave of small food and retail plans hitting city agendas this year, including a banh mi shop proposal that surfaced earlier in 2026. The City of West Allis Legistar calendar and local coverage, such as this banh mi corner plan, offer additional context on recent proposals.
