
Dos Toros Taqueria is gearing up for a Loop reunion this May, bringing its Mission-style burritos back to downtown Chicago by reopening its original outpost near Dearborn and Madison. The New York-born chain pulled out of the city in 2022, and its return comes as parent company Founders Table looks to plant deeper roots in the local market.
As reported by The Business Journals, the restaurant is slated to reopen at 1 N. Dearborn St. in May and is eyeing additional downtown locations, according to the company. The April 2, 2026, story notes that May is the target month, but a specific opening date has not yet been set.
Back After a 2022 Pullback
Industry coverage traces Dos Toros’ Chicago retreat to late 2022, when downtown foot traffic and office occupancy lagged. Nation's Restaurant News reported that the chain exited the Midwest at that time and identified the Dearborn address as its original Loop location. The planned return lines up with a broader wave of fast-casual brands testing whether office-heavy districts are finally ready for a full lunchtime comeback.
Dos Toros’ founders told Nation's Restaurant News, "Reopening our original location at Dearborn and Madison feels especially meaningful," framing the move as a nod to the Loop’s slow but steady revitalization. The comment underscores how the company views the area as a bellwether for its broader Midwest ambitions.
Parent Company Pushes Growth
Founders Table, the holding company created when Chopt merged with Dos Toros, has been busy building out its portfolio. In January, it acquired Chicago-based Protein Bar & Kitchen in a deal the Chicago Sun-Times reports is intended to help the group scale in airports and other nontraditional venues. Hoodline also covered the acquisition and noted Founders Table’s stated plans to lean on franchising and smaller footprints to push beyond traditional downtown storefronts.
What To Expect On The Loop
Once the lights are back on at 1 N. Dearborn, Dos Toros will reenter a crowded midday scene along Dearborn and surrounding blocks. Trade outlets say the brand’s format is built for office corridors and transit-adjacent corners, where quick service and customizable burritos are part of the daily routine. FastCasual and other industry publications report that Founders Table is pursuing a mix of company-operated and licensed locations, including airports and college campuses.
The company has not yet shared a specific opening day or set hours for the Loop store. The Business Journals lists May as the target month and notes that more details are expected closer to launch.
