California-born breakfast and lunch chain EggBred is moving into the thick of St. Augustine's Historic District, with a new shop planned for 56 St. George Street and a May opening on deck. The spot is set to bring another morning-to-midday option to one of the city’s busiest pedestrian stretches.
What They Will Be Serving
EggBred leans hard into egg-centric comfort food. The menu centers on stacked sandwiches like a classic Bacon Egg & Cheese, a Ribeye Steak & Egg, and an Eggbred Cheeseburger topped with an over-medium egg. The chain says it cooks from scratch, "makes our sauces in-house" and uses fresh-cracked eggs, according to EggBred.
For anyone who is not in a sandwich mood, there is a lineup labeled "Not Sandwiches" that includes avocado toast, poutines and rotating smoked-salmon items. It is very much a brunch-all-day vibe, just without the bottomless mimosas.
How It Fits The Historic District
The new EggBred will sit in the middle of the action on St. George Street, among tourist-heavy neighbors like Bull & Crown Publick House, Castillo Ice Cream & Coffee and White Lion near the Augustin Inn. As reported by What Now, the shop will take over 56 St. George St., a high-foot-traffic corridor that pulls in both visitors and locals.
The address positions EggBred to chase the early crowd grabbing breakfast before sightseeing, then ride the lunchtime rush as people cycle through the historic core.
The Franchise Behind It
Franchisee Xhimi Bujari is the local name on the lease. He previously pursued an EggBred location in Fruit Cove, according to the Jax Daily Record. That outlet notes Bujari, originally from Albania, finished seventh on a season of Big Brother Albania and has been active in the area while helping build EggBred's presence on the East Coast.
The St. Augustine shop marks another step in the chain's push into Northeast Florida, with the Historic District serving as a high-profile showcase.
When To Expect It
Bujari told What Now the St. Augustine location is expected to open in May. Existing EggBred locations typically operate from the early morning into the afternoon, and the brand shares menu updates and specials through its site and social channels. For opening-day details and hours, keep an eye on EggBred or @eggbredoc.
Once the doors open on St. George Street, locals can expect an early breakfast scene followed by a steady lunchtime churn of tourists and residents looking for something with a little extra yolk.
