The shop will land amid a recent surge of national and regional eateries moving into the center and will be run by local franchise partners, who are lining up giveaways and promo events for early customers.
That timeline and grand-opening game plan were first reported by Community Impact, which notes the business is planning a May 16 grand-opening event from 10 a.m. to noon. According to the outlet, the first 50 people in line will score free Potbelly for a year, and diners can expect several of the chain’s staple menu items to be on offer.
The buildout is already logged in the state paperwork. The Texas Department of Licensing and Regulation’s project record for the Hutto location lists the Potbelly shop at 150 Alliance Blvd. and names Jignesh Patel as the tenant contact. The filing details roughly a 2,000-square-foot tenant improvement, described as a renovation and alteration project that has been registered for review and inspection.
Another Chain Plugged Into Townwest Commons Growth
Developer NewQuest tagged Potbelly as a planned tenant at Townwest Commons when it announced the lease last year, saying the center has been steadily filling with national brands as Hutto’s population and retail demand climb. NewQuest has highlighted the center’s proximity to US 79 and framed it as part of the area’s expanding retail footprint. The Patels behind the Hutto shop also recently opened a Potbelly in nearby Georgetown, a local debut reported earlier this year that underscores the franchisees’ broader push into Central Texas.

The Hutto store plans to start serving customers in late April, with the May 16 grand-opening celebration bringing prizes and a Plinko game to the party, according to Community Impact. Potbelly’s standard lineup of toasted sandwiches, shakes, and salads, along with details on hours, menus, and catering, is listed on the chain’s site at Potbelly.com, where customers will be able to look up the Hutto shop once the location goes live.
