Downtown Detroit is about to get a taste of a suburban gas-station cult favorite. Saroki's Crispy Chicken & Pizza is opening its first Detroit outpost inside Griswold Market & Spirits at 735 Griswold St., with plans to start serving on May 4. The move marks Saroki's first standalone spot outside its long-running gas-station footprint and adds another quick-service option to the Financial District.
According to the Detroit Free Press, the new counter will operate inside Griswold Market & Spirits, a market and bottle shop on the ground floor of the Security Trust building, and will offer carryout and delivery from downtown. The Free Press reports that franchisees Yousif Kashat and Bahir Mikha are first-time Saroki franchise owners for the site. In a press release, Todd Saroki called the move "a major step forward for our brand," the Free Press notes.
From Gas Stations To Downtown Counters
The Saroki brothers launched the business in 2012, and for years the brand built a loyal following by tucking kitchens inside mega gas-station centers across southeast Michigan, turning convenience-store pizza and fried chicken into a local obsession. The Metro Times has tracked that rise, and the company’s own locations page lists multiple stores across the region along with a "coming soon" lineup that points to more expansion ahead.
What Griswold Market Will Offer
Inside the Security Trust building, Griswold Market & Spirits will stock fresh meats, organic produce, liquor, beer and wine, plus snacks and cigars. Posted hours are 10 a.m.–10 p.m. Monday through Thursday, 10 a.m.–11 p.m. Friday and Saturday, and 10 a.m.–9 p.m. Sunday. The downtown counter will be Saroki's 23rd location in southeast Michigan, according to the Detroit Free Press.

Taking over a ground-floor space in the Security Trust Lofts at 735 Griswold plugs a grab-and-go concept into a section of the Financial District that local groups have targeted for more street-level retail and residential energy. The Downtown Detroit Partnership notes that the former bank building now includes apartments with commercial space at sidewalk level, which makes it a natural fit for quick-service options like Saroki's.
