Cocoa Beach is about to smell a lot more like butter and espresso. A La Vie, a French-style patisserie and café from classically trained chef Laurent Carillon, is set to open in downtown Cocoa Beach this Thursday, May 14, promising flaky croissants, espresso, and other French pastries for both beachgoers and locals.
Per the Orlando Business Journal, A La Vie will begin service on May 14 at 1 S. Orlando Avenue in downtown Cocoa Beach. The outlet reports that the quick-service menu will lean into authentic croissants and espresso drinks, and notes the opening as a fresh entry in the Space Coast dining lineup.
Chef and menu
Carillon trained in France and spent years working in Florida kitchens before launching the Cocoa Beach outpost, according to Florida Today, as republished by AOL. The profile quotes him calling the bakery’s beignet a "true French beignet" and says initial hours will be roughly 9 a.m. to 5 p.m. while the team builds staffing and adds items. At first, the lineup will focus on classic French pastries like croissants, pain au chocolat, and beignets, alongside espresso-based drinks.
Local fit and business filing
Public business records show A La Vie is incorporated as A LA VIE, LLC and lists Laurent and Whitney Carillon as managers, per Florida Department of State records. The owners say they want the café to feel community-oriented and to eventually expand into evening events and interactive cooking nights as staffing allows. The opening adds a French patisserie option to downtown Cocoa Beach's steadily evolving food scene.
At launch, expect a compact, beach-friendly setup with pastries made on-site and grab-and-go service aimed at the morning crowd. For more on the opening and a fuller profile of the chef behind the concept, see coverage in the Orlando Business Journal and the Florida Today feature via AOL.
