Owner Stephen Holmes says the Richardson spot will serve as a local hub for roasting, events, and collaborative projects.

As reported by Community Impact, Holmes confirmed in an email that Peregrine focuses on “black coffee done right,” meaning the team prioritizes sourcing, roasting, and careful espresso preparation rather than leaning on artificial ingredients. To keep things clean, most syrups, fresh-brewed chai, and in-house caramel are made on site. The outlet highlighted specialty drinks such as a blood orange vanilla latte, a blood orange mocha, and the “Thunderbolt” sparkling vanilla espresso lemonade, along with cream sodas, lemonades, and fresh-juiced ginger beer. Bags of whole-bean coffee are sold in-store and online, and staff will grind beans upon request.

Roastery roots and local plans

According to Peregrine's website, the company started out as a roastery in Westcliffe, Colorado, where its flagship café and roasting operation are still based. The site emphasizes small-batch roasting and lists barrel-aged and specialty coffees among its offerings. Holmes said the Richardson shop will help Peregrine expand roasting capacity while also hosting collaborative events throughout the Dallas area.
