Pinsarella Market, a Roman pinsa-focused restaurant and marketplace, is headed to the storefront at 8131 La Mesa Boulevard, with plans to open sometime between October and November 2026. The concept blends dine-in service with a compact market and a self-serve wine-and-beer bar aimed at families and takeout crowds.
What Pinsarella Will Serve
Pinsarella builds its menu around Pinsa Romana, an oval Roman flatbread the company describes as lighter and more digestible than standard pizza. The brand already produces pre-baked pinsa crusts for restaurants and retail and leans on plant-forward ingredients with no artificial preservatives. According to Pinsarella, the product is intended for both foodservice operators and home cooks who want to recreate the same plates in their own kitchens.
The Dough And The Recipe
The company credits its dough process as the secret behind the crust. Pinsarella points to a careful cold fermentation, describing it as a "slow, up to 72-hour dough maturation process," per Pinsarella. That method, the company says, yields a light, airy interior and a crisp exterior sturdy enough to handle toppings without sagging in the middle.
Why La Mesa?
Pietro Di Giammarino, Pinsarella's CEO, told What Now San Diego that he chose La Mesa for its family-friendly vibe and reliable neighborhood foot traffic. La Mesa Village regularly hosts family-focused markets and events, like the San Diego Made spring market, an atmosphere local coverage has highlighted along the village corridor. That community-minded backdrop, Di Giammarino said, lines up with the brand's plan to stay approachable and affordable.
Where It Will Go
The new market is slated to move into the retail space at 8131 La Mesa Blvd, a downtown village property listed on LoopNet. The Chamber of Commerce lists Kratom Kava Bar at that same address, indicating the space has recently shifted from a kratom and kava shop. Based on the building's size and layout in the listing, it appears suited to a small dining area alongside a retail counter and market shelving.
Timeline And Expansion
The La Mesa outpost is intended to serve as Pinsarella's first consumer-facing location in the region, with a goal of opening two or three units before any larger buildout. The La Mesa Market is targeting an October to November 2026 opening window, and the CEO said further expansion will only happen if the recipes and family-first atmosphere can be maintained, according to What Now San Diego. For now, the focus is on getting operations right at the La Mesa site before committing to a broader rollout.
