Joy Café, a new bakery-and-brunch spot with a strong Mexican twist, has opened on the town’s eastern edge, bringing house-baked bread, scratch-made breakfast plates and on-site coffee roasting to the east Dallas suburb. Owner Andrea Hermosillo launched the cafe after closing her downtown Dallas restaurant in April 2025 and describes the new Sunnyvale shop as a personal act of resilience.
The menu centers on pastries, pancakes and coffee roasted in-house, all built around a from-scratch philosophy. In an interview with The Dallas Morning News, Hermosillo said, "I need to be resilient and keep up in life, and everybody needs joy." The same report notes she opened Chimalma Taco Bar in 2020 and later shut it down in April 2025 after downtown construction cut into foot traffic.
