Baci Winery in Madison is getting serious about supper. The Grand River Valley spot is building a new 1,500-square-foot kitchen that will more than triple its current prep space and clear the way for the tasting room to evolve into a full-service restaurant. On top of that, the owners are adding production space, larger patio areas, and a nearly finished barrel room as part of a multi-year expansion. The long-game goal is clear: turn Baci from a quick wine-trail stop into a full-blown dining destination for local visitors and wine tourists alike.
Carpenters are already framing the expanded kitchen, part of a series of upgrades that have rolled out over roughly the past five years. The current phase is slated to wrap up in early 2027, according to Cleveland.com. That reporting notes the existing tasting room is set to become a full-service restaurant with a bigger, wine-friendly menu, while a new tasting room will rise in the southwest corner of the property overlooking the vineyards. The nearly finished barrel room and other additions are designed to boost capacity for both guests and production.
Menu, Wine And Live Music For Now
Until the restaurant conversion is complete, Baci is sticking with a more modest food setup paired with live music and weekend pop-up dinners. Detailed menus and downloadable lunch and dinner PDFs are posted on the winery’s site, so regulars can keep tabs on what is coming out of the kitchen. On the wine side, Baci bottles a broad range of varietals, from Pinot Grigio and Riesling to Sangiovese and Saperavi, all available through its retail shop and online retailers. Private events are also on the table, with dates and details listed on the winery’s events page. Current offerings are outlined on Baci’s menu and at retailers such as Vinoshipper.
Who Is Running The Kitchen
To keep the food program in step with the construction plans, the winery brought in Chef Kyle Anderson about a year ago to lead culinary operations and recently hired Peter Neundorfer as director of operations ahead of the restaurant buildout. Anderson’s resume includes executive posts at Red, The Steakhouse, and Marble Room, and the hires signal a deliberate move to level up the kitchen as the new restaurant comes together. The team plans to keep regular service going throughout the work and to phase in the restaurant opening once the new kitchen is ready, as reported by Cleveland.com.
What It Means For Grand River Valley Visitors
The expansion lands at a time when the Grand River Valley is leaning into food-and-wine tourism, with more tasting rooms adding dining programs to keep guests around longer. Baci sits on State Route 307 among a cluster of Ashtabula County producers that promote live music, tours, and private events to reel in summer crowds, according to Visit Ashtabula. Added on-site dining and production capacity can help wineries capture more direct sales and host larger private events, which matter a lot once the busy tasting season winds down.
Construction is already in progress, but the winery says it will hold to its regular hours and share updates on menus, hours, and private-event bookings on its website. The property sits at 7800 Warner Road (Route 307) in Madison. Visitors can find the current schedule and downloadable menus on Baci’s Visit and Food Menu pages, and the team expects to flip the tasting room into restaurant service once the new kitchen is finished.
