The Truffle Cheese Shop, a longtime Cherry Creek go-to for cut-to-order wedges and carefully styled boards, is set to return under new ownership, with retail service expected as early as this fall. A group of Denver-based investors plans to take the revived Truffle beyond walk-in cheese sales, adding cheesemaking classes, curated platter delivery, catering, and wine-and-cheese events. The team also aims to build an online marketplace to give Colorado producers and specialty-food makers shelf space online and, eventually, in a brick-and-mortar shop again.

New owner, new direction

As reported by Westword, Denver-based DHP Holdings has taken a majority stake in the business and is now exploring locations for a new retail storefront. David Walsh of DHP said, "The Truffle has been part of Denver’s food culture for decades," noting that the new ownership group wanted to keep the concept locally owned and evolving instead of letting it fade away. The announcement also states that owner Lisa Morris and the new investors resolved the outstanding obligations that had pushed the shop to retreat to online operations last year.

How it closed

Last October, the Colorado Department of Revenue seized Truffle’s Cherry Creek storefront over unpaid taxes, and equipment from the space was put up for auction after an alleged tax liability, according to reporting at the time. BusinessDen reported that Morris pivoted to online orders and private events while she worked to address the tax issue.

Where the old shop went and what's next

The Sixth Avenue location that once housed the Truffle was later leased and turned into a Chicken Riot outpost, while the Truffle team focuses on relaunching with a broader slate of services. Plans for the revived business include classes, catering, and a Colorado-focused shop-in-shop format to showcase local producers. Westword also notes that the new model is set to feature curated platter delivery and wine-and-cheese pairing events.

For now, DHP and Morris say they are scouting neighborhoods and expect to announce a new address in the coming months, with an eye on a fall reopening. Until a physical storefront is named, the Truffle will continue handling online orders and hosting private events while it builds out its expanded offerings.
