
Chillwaukee, the colorful popsicle outfit that started on a bicycle, has rolled its retro trailer onto the Milwaukee Public Market patio and began serving Hawaiian-style shaved ice on June 12. The pop-up is running weekends in the Historic Third Ward, with Friday and Saturday hours from 10 a.m. to 8 p.m. and Sunday service from 10 a.m. to 6 p.m. Co-owner Sam Wisneski said the move gives the event-based brand a consistent spot to show off its house-made syrups and handcrafted toppings.
As OnMilwaukee reported, Chillwaukee’s striped trailer is parked outside the market at 400 N. Water St., starting June 12, and the market's vendor listing now includes Chillwaukee as a seasonal operator. The Milwaukee Public Market notes summer weekend hours and highlights outdoor vendors along the St. Paul Avenue sidewalk, which is where the trailer is stationed.

Chillwaukee is dishing up ultra-fine, snow-like shaved ice topped with syrups made from real fruit juices and house-made toppings such as mochi and fruit jellies, with extras like sweetened condensed milk or a scoop of vanilla tucked inside. Urban Milwaukee notes that many options are vegan and gluten-free, and that the menu will rotate between classic and seasonal flavors.

The company reports it uses an ice shaver imported from Japan to create the airy, snow-like texture that defines Hawaiian-style shave ice. Vendors commonly rely on block-ice shavers from manufacturers such as Fujimarca in Taiwan and Swan in Japan, and Fujimarca’s product pages show the commercial block shavers used by shaved-ice operators. Local reporting also notes that Chillwaukee makes its own blocks of ice with purified Milwaukee water and sometimes freezes them with a coconut milk base for a creamier mouthfeel, and that drizzles include matcha, ube and chocolate to complement flavors like yuzu, lime and strawberry.
From Pop-Ups To A Third Ward Base
Chillwaukee started in 2017 as a tricycle popsicle business and was purchased by Sam and Alyssa Wisneski in 2023, a change that was covered when the new owners took the reins.
