
A popular Henderson pizzeria is about to stretch its dough a little farther, expanding into the empty storefront next door to add a deli and sandwich shop. The new space is set up as a daytime counter for made-to-order sandwiches and deli staples, giving the business a way to chase lunch traffic and boost takeout while the existing pizza operation keeps doing its thing.
As reported by the Las Vegas Review-Journal, a video segment that aired Monday and was updated Tuesday outlined plans for a separate sandwich counter right next to the pizzeria. The piece noted that details such as the deli's name, hours, and target opening date have not yet been publicly shared.
Why the addition matters locally
Henderson has been one of the more affordable dining markets lately, which helps fuel demand for grab-and-go options and lunchtime counters, according to reporting on Henderson serving up cheap eats. DoorDash-cited data in that coverage shows slower menu inflation here, a setup that can make daytime sandwich sales a practical way for neighborhood spots to smooth out weekly revenue.
Other restaurants are doing the same
Expanding into the unit next door is a familiar restaurant move. Berkeley's Cheese Board Collective recently shifted its bakery and cheese shop into an adjacent storefront to open up more room for the pizzeria's workflow, SFGATE reported. And chef Jimmy Pardini opened Strada Italian Sandwiches beside his Annesso Pizzeria in Fresno this spring, according to the Fresno Bee, showing how owners can use side-by-side concepts to reach daytime diners.
Cheese Board owners told SFGATE that their expansion should improve flow and customer experience, benefits operators often cite when they add neighboring concepts.
