A new traditional American spot has made its debut in the neighborhood. Called S.K.Y, the new arrival is located at 1239 W. 18th St. (between Allport & Throop streets) in the Lower West Side.

This new contemporary American eatery—helmed by chef Stephen Gillanders, formerly a partner and chef at Lincoln Park's Intro—features elevated fare with hints of Asian flare.

The restaurant's name comes from the initials for Gillanders' wife, Seon Kyung Yuk.

For starters, expect to see items like Thai chicken soup with ginger and shiitake mushrooms, and roasted roots salad with grapes, bleu cheese, and pecans.

Diners can also enjoy entrees like Faroe Island salmon with a miso-mushroom crust, caramelized diver scallops with brown butter dashi, and maitake mushrooms, and prime beef short rib in a kalbi glaze with green apple and rosemary.

Rounding things out is an extensive libations menu featuring cocktails, domestic and international beers, and wines by the bottle. Signature cocktails include the "Absinthe Minded" with tequila, rye, absinthe, and grapefruit; and "The Black 'Pear'l" with gin, eau de vie, vermouth, pear, and herbs. (You can check out the full menu here.)

With a five-star rating out of 11 reviews on Yelp so far, S.K.Y has already made a good impression.

Amy S., who was among the first Yelpers to review the new spot on November 30th, said: "You must go to S.K.Y.!Went last night for a birthday dinner, and it was absolutely magical. Sat at the chef's counter and had the $49 tasting menu—it was amazing to see the chef work."

Yelper Jennie C. added: “So glad to have a restaurant of this caliber in my neighborhood, though I'd probably go broke real soon if I ate here too often."

And Mike K. said: "I've been looking forward to S.K.Y. opening in Pilsen for some time. Super amazing small bites and service that matches the eating experience."
