
A new bakery and breakfast place, specializing in Czech-style pastries and coffee, has made its debut as a pop-up in a Penn Quarter barbecue joint.
Called Republic Kolache, it's owned by displaced Texans missing the taste of the sweet and savory dough-based treats they describe as the "national pastry of Texas." Savory options include jalapeño sausage and cheese, bacon and egg, and Tex-Mex saag paneer (a vegetarian option with fried cotija cheese). Sweet kolache flavors include Mexican chocolate and strawberry and cream.
Republic Kolache has gotten good reviews thus far, with a four-star rating from16 reviews on Yelp.
Deb G., who was among the first Yelpers to review the new spot on May 30, said, "As a kolache newbie, I'm blown away by Republic Kolache. The dough is top-notch, very fluffy and sweet, with a great texture to rival any kind of pastry. It's a filling breakfast treat and would make a fantastic snack to fill the gaping hole between lunch and dinner."
And Austin W. said, "This was everything this Texan wanted it to be. The brisket, egg, and cheese was out of this world! "
