
A fast-casual restaurant serving salads, broth bowls and flatbread sandwiches has opened its doors in the neighborhood. Called Mix, the fresh addition is located at 215 W. Holly St. in Bellingham.
This is the first Mix to open in the city, with a second location slated for November in Barkley Village.
The menu features items made with locally sourced, seasonal ingredients, like the Fall Harvest salad with mixed greens, quinoa, roasted red beets, apples, candied walnuts and chia seeds with French vinaigrette. Other offerings include the Boat Noodle Beef broth bowl with glass noodles, onions, red peppers, pickled jalapeños, peanuts and mint, and desserts like frozen custard. Here's the full menu.
Mix has proven popular thus far, with a five-star rating out of six reviews on Yelp.
Laurel L., who reviewed the new eatery on Oct. 10, wrote, "Ingredients in both mixwiches (falafel and Cobb) were fresh, delicious and plentiful, the boat noodle soup was well seasoned and tasty, and the kids' bento box turned my daughter into a falafel lover — hooray!"
And Rowan C. added, "I am so excited for the newest fresh food option in Bellingham! They genuinely care about every product that goes into their mixes!"
