Though they're trendy today, macarons have been connected to weddings for almost 500 years. These light cookies, made of egg whites, ground nuts and sugar, were a great favorite of the Italian noblewoman Catherine de' Medici, who served them at her wedding to Prince Henry (later King Henry II of France) in 1533. Just as royal weddings today drive trends, so too did nuptials of that day, with macarons suddenly becoming a fashionable wedding dessert.
The modern macaron — a delicate combination of meringue-based cookies with creamy filling — was created at the beginning of the 20th century. Pierre Desfontaines, the grandson of Louis-Ernest Ladurée (founder of famed Parisian patisserie Ladurée), stuck two macaron shells together with a simple chocolate ganache, thus creating an icon of French chic and a cookie empire in one fell swoop.
