Celebrate the Olympia Native Oyster
The Seattle Culinary Academy celebrates Washington's Olympia Native Oyster this Wednesday. Once thought to be on the verge of extinction, this delicacy has made a revival. Now harvested and cultivated by a few family-run shellfish farms around the state, it will be on display for tasting at the college, alongside pairings of wine.
The event also includes a brief presentation on the history of oyster farming by David George Gordon, a science writer and shellfish aquaculture expert.

Nexstar Leadership Spotlight 2019
