With Thanksgiving drawing near, the Illinois Department of Public Health (IDPH) is urging Illinoisans to adopt strict food safety precautions and measures to prevent the spread of respiratory viruses such as COVID-19 and RSV. Amidst the festive celebrations, attentiveness is paramount to preventing foodborne illnesses and viruses.

As mentioned by IDPH Director Sameer Vohra, hosts can ensure safety by adhering to established food safety guidelines. Key recommendations include properly thawing frozen turkeys and ensuring they are cooked to a safe internal temperature of 165°F. Additionally, practicing suitable indoor ventilation, adhering to hand hygiene standards, and covering coughs and sneezes are emphasized as important practice as stated in IDPH's official announcement.

Clear food safety practices involve washing, separating, cooking, and chilling. It is essential to wash hands with soap and water, especially before and after handling raw turkey. Cross-contamination can be avoided by separating raw meat and juices from other foodstuffs. During cooking, using a food thermometer ensures that all food items have attained a safe internal temperature of 165°F. Furthermore, chilling leftovers within two hours of finishing the meal and storing them in small refrigerator or freezer containers prolongs their safe consumption window to four days. Leftovers should also be reheated to at least 165°F as per IDPH's recommendation.

Typical symptoms of foodborne illnesses, such as vomiting, diarrhea, and flu-like symptoms, can begin a few hours to days after consuming contaminated food or drinks and can last from a few hours to several days. Higher-risk groups include older adults, infants, young children, pregnant women, and those with weakened immune systems who should seek medical care for the diagnosis and management of such illnesses.
