The iconic Galaxy Drive-In of St. Louis Park is charting a new course into the future, with Craft & Crew Hospitality at the helm as its new owners. As confirmed by Luke Derheim of Craft & Crew Hospitality, the property was purchased for a sum just shy of $1 million from entrepreneurial connoisseur, Steve Schussler, who has wielded his Midas touch on a host of Disney World dining spectacles.
According to a statement obtained by KSTP, the group plans not only to retain the cherished drive-in experience but also to elevate it by supplementing the traditional menu with beer and wine options. Expected to break ground on renovations by spring and, they're targeting a grand reopening in the early summer months. This amid fans who have waited patiently for its doors to reopen, purchasing food to-go will also be an option presented by the company.
For a decade, under Schussler's guardianship, the Galaxy Drive-In served up nostalgia with a side of Americana until its doors shuttered. However, Craft & Crew Hospitality envisions a spot where locals can relish their favorites indoors, arranging seating for 60 patrons, and stepping outside the typical seasonal confines, as detailed by Twin Cities Business magazine.
Moving forward with the vision, C&C co-owner David Benowitz revealed the plan to rebrand the space to "Wells’ Roadside," tipping its hat to the success of Gott's Roadside in California. While some elements of the Galaxy's space-age flash will become history, the establishment's structure will stand recognizable for frequenters, clad with modified aesthetics. Craft & Crew, the Hopkins-based corporation currently boasting six other locations, aspires to blend quick-serve efficiency with the heritage of a local haunt. The rejuvenated venue promises not only a digital ordering platform but also assures patently discernible flavors amidst revamped surroundings.
