The 1,400 square-foot space will feature café seating snagged right in the heart of Birmingham and Cincinnati to deliver a range of hot and cold sandwiches, freshly made sausage rolls, various salads, and soups, as well as a vivid selection of fresh meats and deli offerings, according to details shared on Marrow's social media cited by CBS News Detroit. Those behind the culinary concept affirm their mission is more than just pleasing palates. "Marrow is here to build and support a robust and sustainable food system in partnership with our farmers," Ping Ho, CEO and founder, told The Detroit News.

At the helm of the kitchen operations, Executive Chef Sarah Welch, noted for her James Beard Award nominations and her stint on "Top Chef," will be carrying the responsibility of the menu. It was also Welch who first kicked off Marrow in 2018, solidifying its reputation in Detroit's gastronomy scene. The farmer markets' enthusiastic response in Birmingham played a role in Marrow's decision to set up shop there, bringing with it its reputation for quality, locally sourced meats.

Before the doors swing open in the spring, the place will undergo a brief construction period. While meat lovers wait, they can still get a taste of what’s to come by hitting up Marrow's booth at Eastern Market on Saturdays or at Birmingham's Farmer's Market on select Sundays. This move is not only about expansion but also roots. Marrow is setting up a flagship store and processing facility in Eastern Market, with construction on the horizon, as The Detroit News further details.
