They were en route to expanding their BBQ empire at the former Honey Bear’s BBQ spot but hit a wall with runaway expenses, prompting them to stir up their business recipe.

The compact 1,700-square-foot establishment will not only dish out what promises to be some enviable fried chicken and ribs but will also offer a hand-picked selection of draft and canned beers, cocktails, and possibly wine. The new joint, according to a Phoenix New Times report, is about keeping it "simple," said Scott Holmes, whose quest to perfect fried chicken during the pandemic lockdown inspired this new food venture.

Indeed, the mid-March opening is tinged with a personal touch – Holmes fondly recalls the vibrancy of Roosevelt Row from his high school days. The neighborhood has since welcomed a flurry of exciting new businesses, making it all the more appealing for the Holmeses' latest project. "I'd love to be down there," Holmes told Phoenix New Times, painting a picture of the area's burgeoning charm.

Eager patrons can look forward to a concise menu primarily skewed toward takeout, with the kitchen's size influencing the dish offerings. In addition to its namesake chicken and ribs, the Full Speed Chicken and Ribs lineup is set to include Nashville hot chicken and barbecue chicken, confirming the eatery's commitment to deliver hearty, Southern-style goodness.

Scott and Bekke Holmes have made significant headway since their announcement last year, backing their venture with a liquor license application and sprucing up the old Trapp Haus BBQ with all-new equipment, including a custom smoker. Before Full Speed Chicken and Ribs opens, fans can still savor the Little Miss BBQ flavor at its two existing locations, where the couple's barbecue prowess has continuously raked in accolades.
