Mauricio Gudiño's venture, featuring a menu committed to vegan-first principles, hopes to stir up conversations about veganism against the backdrop of contemporary art with specialties like cascara and tepaches finding fans at the cutting-edge Ruby City art centre, which has been recognized by TIME magazine.
