And then there are people that think I’m a fucking asshole, and they’re not going to come in here, so I don’t have to deal with them. That’s a win-win for me. I’m only filtering in the people that I want."

Alhoch emphasizes authenticity in his dishes and has always prioritized running an independent restaurant, drawing from his Italian and Syrian heritage. As the brand evolves, his personal growth is evident, with the birth of his first child bringing a shift to a more mature version of Saint Pasta.
