The outpost is expected to open its doors in the fall. Meanwhile, out on Long Island, a similar bagel innovation is taking place at the Everything Bagel, known for its pull-apart pieces with a variety of toppings. Moonrise Bagels began their journey selling at farmers markets in 2021 and have since opened locations in Woodstock, Kingston, and Poughkeepsie.

On the other hand, the next chapter of Corner Bistro is unfolding in the East Village. Corner Bistro's owner, Elizabeth McGrath, has been in full swing preparing the new location on Sixth Street and Avenue A. "Elizabeth McGrath said she wants the restaurant to honor the building's history and preserve the East Village character," as per an interview by EV Grieve. The East Village location is not just about burgers; it will also offer meatloaf and chopped steak with onions, all complimented by coffee from Aldo's on Long Island – and yes, they'll sell it by the pound too.

Notable features of the new Corner Bistro include a cherry blossom mural by Elizabeth's husband, Donald McGrath, and a white oak bar. This East Village outpost plans to serve the same highly regarded burger alongside a few novel offerings. "The new bistro will pay attention to history, but it cannot replicate the original Bistro," McGrath elucidated during her EV Grieve interview. Corner Bistro's expansion is a nod to New York's evolving food landscape while staying rooted in its acclaimed tradition.
