In a significant shift for Del Mar's culinary scene, Market Restaurant + Bar, a local favorite known for its farm-to-table ethos, has been sold to Monica and Bernd Brust, according to the San Diego Union-Tribune. The long-standing establishment, helmed by chef Carl Schroeder for 19 years, has been a staple in San Diego's restaurant repertoire, earning itself a Michelin recommendation.
The Brusts, who have over a decade of experience in the restaurant industry, have promised to maintain the core values and operational standards that have defined Market. They also plan to invest in the property, suggesting expansions in hours, wine offerings, and a refreshed interior. Their commitment to the local community was a key factor in Schroeder's selling decision. Bernd Brust expressed a desire to be embedded here, as he and his wife have plans to raise their two sons in San Diego, the Union-Tribune reported.
Under the new ownership, chef de cuisine John Thompson will take the kitchen, continuing the work he's done alongside Schroeder since the beginning. Thompson's history with Schroeder traces back even further, to their days at Arterra Restaurant before opening Market together in 2006. While Schroeder is stepping away from day-to-day operations, he will remain available for the transition as needed, according to an interview with San Diego Magazine.
Despite the change in ownership, Schroeder's ethos will continue to permeate Market. He expressed his confidence in the Brusts' understanding of the original mission statement of the restaurant. "What Carl built with Market is extraordinary," Monica Brust told San Diego Magazine. "Bernd and I are so proud to carry on that legacy as a family-owned restaurant, and work with the same talented culinary team that helped him build it over all these years."
For Schroeder, the transition marks the end of an era and the beginning of a more personal chapter. With plans to focus on family time and possibly care for his aging parents, he noted his eagerness to attend his daughter’s track meets—a simple pleasure he's missed due to the demands of his successful restaurant career.
