Colorado's cult-favorite breakfast spot Urban Egg is swooping into Preston Towne Crossing next week, bringing its loaded pancakes, benedicts and Billion $$$ Bourbon Bacon to Plano’s brunch crowd.
The roughly 3,100-square-foot restaurant is moving into the former Original ChopShop space at 2408 Preston Rd., with staff running a training "mock run" ahead of opening to tighten up service and support a local food pantry.
According to a release from PRNewswire, Urban Egg plans to start serving at 7 a.m. next Monday. To kick things off, the first 20 dine-in tables on each of the first three days will score a free Urban Egg travel mug plus free coffee for a year. The Plano restaurant is identified as the brand's 12th location overall and its second in Texas.
The location page for Urban Egg lists the address as 2408 Preston Rd. #704C, includes a waitlist for reservations and links to a nearby hiring site for open positions. The company is also nudging future regulars to sign up for its rewards program as the team finishes last-minute prep.
What To Expect From The Menu
CultureMap Dallas reports that Plano will get Urban Egg's full scratch-made breakfast and brunch lineup. On deck: signature Billion $ Bourbon Bacon, biscuits with sage sausage gravy, and regionally inspired dishes like chilaquiles and shrimp & grits.
CultureMap also points to a sprawling benedict section, house-made cinnamon rolls and a slate of "fancy" pancakes, including blueberry streusel and strawberry cheesecake. Prices generally start around $12 and top out at about $22 for steak-and-eggs, putting Urban Egg firmly in the splurge-y weekend brunch zone.
Community Kickoff And Build-Out
Records with the Texas Department of Licensing and Regulation list the Plano project as a roughly 3,100-square-foot restaurant finish-out, with a review completed in November as part of an estimated $775,000 build-out.
On the community side, the Plano Chamber event calendar shows a mock-run tasting this Friday and Saturday. Proceeds from on-site alcohol sales during those training services are set to benefit Minnie's Food Pantry, giving the opening a charitable twist while staff get their reps in ahead of the rush.
"When my family and I started this brand, it was about more than just serving breakfast," founder Randy Price said in a statement to PRNewswire, adding that Urban Egg is meant to be a neighborhood gathering spot built on scratch-made food.
With hiring underway, training events this week and a full-on grand opening next week, Preston Towne Crossing's daytime crowd can expect some lively brunch lines. For anyone determined to be first in the door, hopping on the waitlist looks like the safest play.
