
East César Chávez just picked up a new late-night hangout in Parley, an Irish-inspired pub from local mixologists Terance Robson and Jack “Slim” Hogan. The bar quietly opened Friday, offering a compact, design-forward room that leans into classic Irish pub conviviality while pushing globally influenced cocktails and neighborhood-minded programming. For now, Parley is easing in with a trimmed menu and limited offerings while the team works toward adding a coffee program and full food service in 2026.
According to Parley, the pub sits at 1628 E Cesar Chavez St and is listed as "Now Open," with regular hours running from 4 p.m. to 2 a.m. daily. The website also includes contact details plus an events page for private bookings, hinting that the small space is aiming to double as a neighborhood living room and special-occasion spot.
Partners And Programming
Founders Robson and Hogan did not open Parley alone. They teamed up with Idlewild, which will operate a morning espresso bar out of the space, and nearby Oseyo, which is supplying pub-style dishes and snacks, as reported by CultureMap Austin. On the community side, CultureMap notes that Parley’s owners are planning Newcastle United watch parties, pop-ups, and wellness-focused gatherings, plus low-key neighborhood draws as a first-Sunday golf meet and a weekly run club. Parley will also be open from 4 p.m. to 2 a.m. on Christmas Eve, Christmas Day, and New Year's Eve, and will close for New Year's Day, according to CultureMap Austin.

CultureMap Austin reports that cocktails are priced at $10–$16, with signatures like the Golden Brown (milk whiskey, spent coffee and Café Borghetti), the Cesar Pleaser (bourbon, apple and snap pea), and a frozen "Finding Memo" that folds Guinness into a rum-based gelato. The drink list leans into unexpected touches such as burnt lemon, Ceylon tea, and wasabi, backed by international beers and a rotating natural wine list. "We grew up in places where the pub wasn’t just where you drank, it was where you gathered," Robson told CultureMap Austin, laying out the vision for the room.
