
San Antonio’s Pan Dulce, a Modern Mexican Kitchen from Brame Brands, is opening a second location at TPC Town Plaza II near the JW Marriott, targeting summer 2026. The new spot will follow a larger Redland Plaza flagship planned for spring 2026 and will combine a bakery with fast-casual Mexican dining, offering pan dulce, breakfast, tacos, and sit-down service.
State permit outlines TPC Parkway plan
State project records filed with the Texas Department of Licensing and Regulation list the TPC Town Plaza II site at 4250 TPC Pkwy, Suite 101, as a 3,000-square-foot renovation that will become Pan Dulce-TPC. According to the filing, construction is scheduled to begin January 5, 2026, and wrap July 6, 2026, with an estimated build cost of about $225,000. The permit describes the work as a new sit-down restaurant in an existing shell and names Brad Peak as the tenant contact.
Owners promise a modern menu and fresh pan dulce
Brad Peak, vice president of operations, told What Now San Antonio that Pan Dulce will bake its own pan dulce on site and serve traditional Mexican dishes with a modern touch. He said all pan dulce will be fresh and described a mini bakery and drive-thru for grab-and-go tacos and conchas. Peak confirmed the Redland Plaza flagship is scheduled to open in March 2026.
Redland flagship appears in state records
Records with the Texas Department of Licensing and Regulation show the Redland Plaza build at 2919 N Loop 1604 E is roughly 3,974 square feet and carries an estimated construction cost near $397,400. That filing lists a November 3, 2025, construction start and an April 1, 2026, completion date, and notes the project will include both a sit-down dining area and bakery space. The larger footprint is intended to support breakfast, lunch and dinner service along with a dedicated bakery operation.

Taken together, the pair of permits and the owners’ pitch point to a bakery-forward, grab-and-go setup tailored to busy Stone Oak and TPC Parkway corridors.
