The operator is eyeing a spring opening, with a quick mid-January build start and a mid-March finish if the paperwork stays on track.

According to What Now, paperwork filed this week with the Texas Department of Licensing and Regulation lists a project titled “Marble Slab Creamery & Great American Cookies” at 11910 E US 290 Hwy WB, Suite 140 in Manor. The filing reviewed by the outlet details a January 15, 2026, construction start date, an estimated March 15 completion date, and a 1,501-square-foot tenant fit-out. What Now also reports that the project appears as a designated tenant in the Manor Crossing Shops lineup.
Franchisee Expands Around The Corner
Franchisee Barkatali Maknojiya, who has been building a portfolio of FAT Brands concepts in the area, told What Now that the Round Rock Marble Slab at 200 University Blvd "may open as soon as this weekend." Maknojiya is identified in the Manor filings and, according to the same reporting, has already added Great American Cookies to his local holdings. With those brands already up and running nearby, the Manor location could move faster from permits to opening day, since systems, suppliers, and a pool of experienced staff are largely in place.
