A veteran-owned wine hangout with serious food ambitions is headed for downtown Bastrop. Pluto’s Wine Bar, a family-run project led by chef John Wayne Formica, is moving onto Main Street with plans to blend a bottle shop, chef-driven dinner menu, and full slate of events into a go-to date-night spot for locals and visitors.
Formica describes the concept as “a wine bar, a restaurant, and a bottle shop,” with full-menu service planned to kick off around 5 p.m. daily and a kitchen built around flatbreads, cheese, and charcuterie boards, and a dry-aged fish program for crudos, according to press materials and an interview cited by What Now. Expect a producer-focused wine and beer list, thoughtful zero-proof options, a curated wine club, and a retail bottle section. Educational tastings, themed events, and private functions are already baked into the opening strategy.
A neighborhood bottle shop and events space
Pluto’s is already listed in the Bastrop Chamber directory as a neighborhood bottle shop and private-events venue, hinting that the owners are lining up event and retail operations ahead of opening. The chamber listing provides an official site and phone number for inquiries, and the venue has a storefront website that remains behind a login.
Food, fish, and flatbreads
In a Facebook post quoted in coverage, the team says, “We’re curing everything right here on site—fresh pristine fish plus time in our dining room ager,” reinforcing plans for a dry-aged fish program geared toward crudos, as reported by What Now. That cure-and-age approach is meant to power a seafood-forward, small-plate section of the menu built around crudos and shareable dishes. If the execution hits the mark, Bastrop could be looking at a distinct niche that plays nicely with the wine-first beverage list.
When to expect it
The team says Pluto’s is scheduled to open in early 2026 on the 900 block of Main Street near Chestnut. For updates, the owners are steering followers to their Instagram handle @plutoswinebar and the venue’s website, where they plan to share announcements, reservation details, and event sign-ups.
