The new outpost, dubbed Ephemeral Tap & Bottle, is set to lean hard into carry-out beer and wine while running its own rotating brewery program. Owner Weston Scott says the Jefferson Park spot will feel lighter and brighter than the Skyland original, but neighbors can still count on community-focused events.
As reported by Westword, the Jefferson Park location will move into a former hair salon at 2855 West 25th Avenue and is aiming for a March opening, although Scott told the outlet that permitting roadblocks with the city have slowed the timeline. Westword notes the storefront will operate under the Ephemeral Tap & Bottle name and is slated to be open daily from about 2 to 11 p.m. once it debuts. The publication also reports that the new spot will stock a larger selection of to-go beers than the Skyland original and may partner with wineries as well.
"It'll be a cross between a taproom and a liquor store," Scott told Westword, summing up the carry-out heavy concept. Scott is teaming up with neighborhood resident Mike Foster on the Jefferson Park project and plans to bring many of the original location's happenings, from fun runs and run clubs to trivia nights and sports watch parties, into the new space. The Jefferson Park outpost will not host food trucks, Scott noted, since the surrounding streets already offer nearby dining options.
How the rotating model will translate
Ephemeral's rotating brewery format launched in Skyland in 2022, when the original location at 2301 East 28th Avenue began featuring a different guest brewery every few weeks, according to 5280. Ephemeral also lists hours and a brewery calendar, and the setup has helped dozens of visiting breweries get in front of Denver drinkers. That same rotating calendar is slated for Jefferson Park, but with more bottles and growlers available for carry-out.

The storefront at 2855 West 25th Avenue had been home to a neighborhood hair salon until the business moved to a larger space late last year, according to AllBiz. Online directories list Deseo Salon & BlowDry at that address previously, and press releases indicate the salon relocated in late 2025, clearing the corner spot for a new tenant. Scott said the corner entrance and steady neighborhood foot traffic made the building a strong fit for Ephemeral's model.
