The concept mixes a from-scratch pasta counter and a small pasta bar with a specialty market, monthly subscription boxes and community-focused classes, all built around one simple mission: making weekday pasta feel easy and affordable for local diners.
According to San Diego Magazine, Pastaria Vivi is expected to open in March 2026 at 119 North El Camino Real, Suite G in Encinitas. Hours are planned as Monday through Friday from 10:00 AM to 7:00 PM and Saturday through Sunday from 12:00 PM to 5:00 PM. The preview notes that the shop blends retail take-home pastas and sauces with a tight, low-key dine-in experience aimed squarely at the neighborhood crowd.
The chef partners bring some serious pedigree. Jennings has held executive roles for Tao Group and helped Mille Fleurs maintain its Michelin recognition, while Treff cooked at Lazy Bear and ran a pandemic-era fresh pasta service called Nardello’s. The pair refined the Pastaria Vivi concept at the Cardiff Farmers Market and built a monthly subscription program they call “The Pasta Drop,” according to the Pastaria Vivi About page.
What to Expect Inside
The Encinitas storefront is set to prioritize retail in roughly 1,700 square feet, backed up by a 200-square-foot outdoor patio, a 12-foot communal table and a pasta bar where guests can watch chefs roll and shape noodles by hand. San Diego Magazine also reports that Pastaria Vivi plans to serve Aisu Creamery gelato, and Jennings says the goal is for a pasta-and-sauce take-home meal to cost “not much more than $10 a person.”
From Market Stall To Neighborhood Pastaria
While they get the brick-and-mortar space ready, the team has been selling pastas and meal kits at the Cardiff Farmers Market and quietly building a local following. Local coverage notes that the chefs are developing a wholesale program to supply fresh pasta to nearby restaurants and are open to adding future outposts in Carlsbad or La Jolla if the Encinitas shop hits its stride, reports SanDiegoVille.
