Clark County building records show commercial plumbing and grading permits have been issued for the parcel at 6215 S. Rainbow Blvd., at Sobb Avenue in Spring Valley, according to the Review-Journal. A construction sign with The Hat’s name is already strapped to fencing around the vacant lot, and crews have kicked off work on site. The visible activity signals that the project has finally moved forward after earlier plans stalled out.
From Alhambra To Spring Valley
The Hat started life as a roadside stand in Alhambra in 1951 and grew under brothers Joseph and Corky Conzonire after they bought the business in 1981, according to The Hat. The Spring Valley location marks a major milestone for the brand, since it takes the concept beyond the state where it was born.
What The New Outpost Will Offer
Local reporting says the build is slated to include a drive-thru, an outdoor patio and roughly a 4,100-square-foot footprint, with the menu carrying over The Hat’s pastrami dip sandwiches, burgers, hot dogs and chili cheese fries, according to Eater Vegas. That quick-service setup, stacked pastrami on a French roll and gravy-soaked fries, is exactly what helped the Alhambra original become a late-night classic. The spot on Rainbow Boulevard plants the new shop in a busy neighborhood corridor that already draws crowds for nearby restaurants and bars.

WhatNow reported Friday that The Hat’s own site now lists the Spring Valley address, and that outreach to the Conzonire family did not produce immediate comment. With fresh permits in hand and construction clearly underway, the chain appears to finally be moving ahead with its first out-of-state restaurant.
