Big renovation, bigger dining room

The partners took a long-empty suite at The Collective down to the studs. They rebuilt roughly 5,000 square feet into a vaulted dining room with a 24-foot ceiling, marbleized service stations and multiple chandeliers, two reportedly clocking in at about $20,000 apiece. The overhaul meant new subflooring, a replacement roof, and extra permits, and the finished space now shows off a hand-painted mural plus a terrace with views of the Sphere and part of the Strip, as reported by the Las Vegas Review-Journal.

French classics reworked with Spanish and Asian accents

I wanted to do a different take on French brasserie food, said corporate executive chef Tayden Poha-Ellamar, who describes a menu that stitches French technique to Spanish and Asian flavors, per the Las Vegas Review-Journal. Opening dishes include pillowy gnocchi in Comte9 cream with French ham, cappelletti in a 24-hour charred-onion broth, as the restaurants spin on French onion soup, a miso-lobster-jus riff on lobster Thermidor and a theatrical tableside beef tartare. Even the bread-and-butter service aims for drama, anchored by an 11-pound tower of c9chire9 butter.

The move is part of a deliberate pivot for the EDO team, which closed its Chinatown tasting-menu outpost last September to focus on larger, showier concepts, as reported by Eater Las Vegas. Partners including chef Oscar Amador, Roberto Liendo and Joe Mikulich have been growing their footprint with projects such as Anima by EDO and out-of-town openings, and Braseria is positioned as the groups most opulent offering so far.

Braseria takes over a second-floor suite inside The Collective, the Convention Center-adjacent dining hub at 3900 Paradise Road, which lists the restaurant among its new tenants (VegasNearMe). The Collectives food corridor is aimed at pulling in both local diners and Sphere visitors, and the larger dining room, billed to hold roughly 110 guests in earlier reporting, lets EDO scale up the theatrical service the group is known for, according to CityCast Las Vegas.
