
Cypress is getting a second shot of Nutella and espresso: Coco Crepes & Coffee is planning a new café at Elyson Town Center west of the Grand Parkway, giving locals another fast-casual creperie option in the neighborhood. The brand is lined up for a unit at 7040 Elyson Exchange Way Ste. 400, with tenant buildout scheduled to start in late April and construction projected to wrap by the end of July. The company has not yet pinned down an official opening date.

The planned café is slated for 7040 Elyson Exchange Way Ste. 400 inside Elyson Town Center, an address that appears in state project records from the Texas Department of Licensing and Regulation. A Jan. 31 filing, cited by Community Impact, shows tenant buildout is expected to begin in late April, with construction scheduled to finish by July 31. The developer’s Elyson site also lists Coco Crepes as one of the incoming town-center tenants as the project fills out.
What they'll serve
According to Coco Crepes, the menu centers on made-to-order sweet and savory crepes and waffles, along with paninis, soups, salads, espresso drinks and house gelato. The chain already runs a Cypress café at the Boardwalk at Towne Lake, which opened in 2020 and is listed, with hours and contact information, on the brand’s Coco Crepes location pages.
Why Elyson matters
Elyson Town Center, a roughly 17.5-acre retail and services hub at Grand Parkway and FM 529, has been pulling in a mix of food and neighborhood-focused businesses. Developer announcements highlight incoming concepts ranging from Chipotle to the MilkShake Factory and Coco Crepes, creating a cluster that is friendly to morning traffic and takeout. Elyson notes the town center is opening in phases through 2026 as new homes rise nearby, a timeline that helps explain why all-day cafés are eyeing the site.

Coco Crepes and the town center’s leasing office have not released official timing, and details such as hours and any ribbon-cutting plans remain under wraps.
