San Antonio chef Jason Dady is rolling a seasonal crawfish kiosk into La Cantera, and he is not exactly sneaking in quietly. CrawDady opens next Saturday, Feb. 21, with a festival-style kickoff at 1 p.m. and will sling made-to-order boils on weekends through the spring.
What’s on the menu
The star of the kiosk is a line-up of made-to-order crawfish boils, offered in four flavor profiles: Dry Cajun, Wet Cajun, Viet-Cajun and Italian garlic-herb. The spread is backed up with shareable sides like boudin balls with grain-mustard remoulade, boudin links, jalapeño-white cheddar hushpuppies with kewpie mayo, and a chicken-and-sausage gumbo over bay-leaf rice, as detailed by CultureMap San Antonio.
Kickoff, hours and free parking
Dady is planning a big family-friendly launch at Frost Plaza, complete with live music from Aaron Montano-Teague, free entry and free parking, plus a Spurs vs. Kings watch party set for 7 p.m. on opening night. The Rock at La Cantera’s event page lists the kickoff at 1 p.m. Saturday and notes that the CrawDady kiosk will run Friday through Sunday during spring, with Friday hours 11 a.m.-10 p.m., Saturday 11 a.m.-11 p.m. and Sunday 11 a.m.-8 p.m.; see The Rock at La Cantera.
Dady’s pop-up playbook
The CrawDady kiosk joins a growing roster of Jason Dady concepts at The Rock, following last year’s Ice Ice Dady shaved-ice stand and the Lil' Bros BBQ Shack. Dady’s partnership with the Spurs and his full-service Roca & Martillo restaurant highlight how he is using both permanent and pop-up formats to keep the plaza buzzing, per Roca & Martillo.
What to expect
Opening weekend is shaping up with a festival-style vibe, live music, kid-friendly activities and the plaza’s big LED screen pulling double duty as the backdrop for watch parties.
