
A stretch of FM 2978 near The Woodlands just picked up a serious slice upgrade, courtesy of 23-year-old owner Emiliano Muñoz and his New York style pies at Emiliano's Pizzeria. Muñoz says he ferments his dough for up to 72 hours, then sends it into a natural gas brick oven so the crust comes out crunchy but not cracker-thin. The lineup swings from classic margherita-style pies to Texas twists like brisket toppings and a hit of Texas hot honey.
Muñoz told Community Impact he grew the business from a farmers market pop-up into a brick-and-mortar spot, opening the doors in February 2025 at age 23. He credits his mother for getting him into the kitchen early, saying, "My mom's a great cook," and adds that hiring and training local staff has been one of the most rewarding parts of running the place. Before striking out on his own, he logged time at Brothers Pizza on Grogan's Mill.
From Dough To Oven
Per Emiliano's Pizzeria, the dough gets up to a three-day ferment, and the kitchen leans on unprocessed flour and extra-virgin olive oil to keep the pies feeling light instead of leaden. Pies bake in a natural gas brick oven at high heat so the crust crisps on the outside while staying chewy in the middle. The online menu lists most 12-inch specialty pies at around $17.99, with build-your-own calzones starting at $12.99.
