Penne For Your Thoughts, the Northshore Town Center pasta shop that grew from a popular Knoxville food truck, announced Friday that it will close after eight years in business. The owners have set the restaurant’s final service day for next Wednesday (Feb. 11), and the on-site food truck will shut down at the same time as the storefront.
Owner Cites Rising Costs
Co-owner Geoffrey Bernstein told the Knoxville News Sentinel that the decision followed "a decline of the food industry, growing economic pressures, and rapidly rising costs," leaving the operation no longer sustainable. Bernstein, who the outlet notes has been in the food business for more than two decades, confirmed that the truck will close alongside the restaurant's brick-and-mortar space. The announcement went up Feb. 6, giving regulars only a short window to drop by before the final service next week.
From Truck To Fast Casual
Penne For Your Thoughts started as a roving food truck and later expanded into a fast-casual storefront in 2022, according to the restaurant’s website. The menu leaned into playful mashups and pun-heavy names like Pastalavista Baby and Chicky Chicky Parm Parm, helping the truck build a loyal following as it settled into a permanent location. The restaurant’s site also lists hours, catering options, and other customer details for anyone trying to squeeze in a last visit before closing.
Marble City Market Roots
The concept was one of the original vendors at Marble City Market when the food hall debuted in November 2021, keeping a stall there through 2023 in a run that helped boost its downtown profile. Listings on MapQuest and local food guides highlight the brand’s ties to the market and to the wider Knoxville dining scene.
What’s Next For Staff And Customers
The closure announcement did not spell out plans for employees or for a successor tenant at the Northshore space. Bernstein’s move from truck to storefront has been covered in local interviews, including a December 2025 episode of the Good Neighbor Podcast. For customers seeking updates or information on gift cards and final menus, the restaurant’s website remains the main place to check. As the community absorbs another local closing, Penne For Your Thoughts is set to serve its last plates next Wednesday.
