Georgetown’s caffeine scene is getting a new player on the west side, as Summer Moon Coffee lines up its first local shop at Bluebonnet Plaza on West University Avenue. The oak-roasted chain is slated to build out a space facing U.S. 29, with construction planned for this spring and a tentative finish in mid-2026, according to project filings and leasing materials. When it opens, the café will add yet another regional brand to a stretch of Highway 29 that seems to sprout a new restaurant every few months.
According to Community Impact, a Texas Department of Licensing and Regulation filing shows the interior build-out scheduled to start in March and wrap up in June. The filing lists Summer Moon as a tenant at Bluebonnet Plaza and notes it as the company’s first Georgetown location. Community Impact reports that its story stems from that same state permit entry, which initially flagged the tenant.
Where It Will Sit
The new shop is planned for Bluebonnet Plaza at 1310 W. University Ave., an 11-acre development anchored by Academy. Endeavor Real Estate Group is marketing the center, and its leasing brochure lays out a mix of pads and inline suites aimed at restaurant and service users. That brochure highlights spaces marked for concepts such as Velvet Taco and other food tenants and maps the layout for the initial phase of the project.
What Summer Moon Will Bring
Summer Moon leans hard into its roasting style, using handmade brick roasters and an open flame to develop its beans, and the brand is just as known for its sweet Moon Milk creamer as it is for the coffee itself. Summer Moon Coffee describes its wood-fired process and Moon Milk as the foundation of its flavor profile, especially in espresso-based drinks. The chain has been expanding across Texas and into other markets, and local reporting notes that this Georgetown outpost would be the first in the city.
Timing And Local Context
Bluebonnet Plaza is part of a broader development wave on Georgetown’s west side, where national names keep landing alongside homegrown operators. Round Rock Scoop reports that Shake Shack, Velvet Taco, and additional service tenants are slated for the center. State Texas Department of Licensing and Regulation project listings also show tenant filings tied to the plaza, including a Velvet Taco entry at the 1310 W. University Ave. address, underscoring that several build-outs are moving through the permitting pipeline at the same time.
For now, no formal grand-opening date has been announced. Neither Summer Moon nor the plaza’s leasing team has shared a public timeline beyond what appears in permit filings.
