Ganbei is slated for Suite 113 inside Sunlite Plaza at 3601 W Sahara Ave, a multi-tenant complex just west of Interstate 15. A commercial listing pegs Suite 113 as roughly 2,432 square feet of restaurant space and notes a new dining concept with a multi-level patio is under development, per Crexi.

Menu and house rules

Law told What Now Las Vegas that Ganbei’s soup bases will rely on “genuine bone broth” instead of powdered mixes and that the restaurant will run as a “true All-You-Can-Eat” operation. He said there will be no limits on certain pricier dishes, and guests will be allowed to pack up unfinished food. Law also said he expects to grow Ganbei into additional branches across Las Vegas and elsewhere in Nevada.

Patio is the pitch
