Green Mountain Falls is about to get a new living room, and it comes with live music, wine tastings and board games by a stone fireplace.
The Columbine Pour House is gearing up to open inside the historic Columbine Inn building, now home to the Green Mountain Falls Lodge, with owners Shannon and Bobby Jackson turning the century-old spot into a cozy mountain hangout. The couple, both local cooks who trained at Paragon Culinary School, are planning a relaxed menu of charcuterie, sandwiches and seasonal plates and say they hope to start serving by March 20.
According to the Colorado Springs Gazette, the Jacksons work with Paragon and Black Bear Distillery and plan to pour local spirits at the new bar. Bobby told the paper, “Whatever is available there will be here, too,” and the couple says they have access to “four or five grills,” will decorate the walls with Jackson family photos and want the space to be a gathering spot for music, wine and games. Historic Lodge, Mountain Patio And Stone Fireplace
The Columbine Inn building, now operated as the Green Mountain Falls Lodge, is a century-old structure with stone surrounding a central fireplace and a large room that opens onto a patio with views of Ute Pass. The lodge site lists 10755 Ute Pass Avenue as its address and describes the property as a long-standing community gathering spot, which the Jacksons say made it the right fit for their pour house concept. The stone bar and walls in the room align neatly with their plan for a warm, mountain town hangout.
Menu, Drinks And Desserts
Food at the Columbine Pour House will focus on shareable charcuterie boards, sandwiches and salads, with soups prepared off-site during colder months and desserts that lean homey rather than high-brow. Shannon’s banana pudding and carrot cake will share the menu with sweets from Thom Seehafer’s Secret Desires, according to the Gazette.
“In the fall, we’ll go more toward soups because we’re in the mountains,” Shannon told the paper. The Jacksons also plan to include plenty of nonalcoholic options, including a "Midnight in the Mountains" espresso martini substitute along with no-alcohol wine and beer.

The Columbine Pour House is registered as a Colorado LLC formed Aug. 12, 2025, with Shannon Jackson listed as agent, according to public business filings. The Jacksons’ connections to the regional food and spirits scene give the new spot ready-made ties in the area, and Black Bear Distillery and Paragon Culinary School both provide background on those relationships.
The plan is for a soft opening in mid-March, with an eye on being fully up and running by March 20.
