Happymix Creperie, a compact shop specializing in Japanese-style handheld crepes and matcha drinks, has opened on the McKinney square. The husband-and-wife team behind the counter, Kevin and Callie Colwick, launched the storefront in late January and are rolling out sweet and savory crepes alongside boba, smoothies and loose-leaf teas. The setup is built for quick, made-to-order orders, with a playful, rainbow-hued menu that has had locals eyeing the South Tennessee Street space during its soft-opening run.
Menu Mixes Sweet And Savory
According to Community Impact, Happymix’s crepe lineup leans into contrast. On the sweet side, there are options such as strawberry Nutella, peaches and cream and peanut butter cup. Savory picks include steak and cheddar, pepperoni pizza and mushroom and mozzarella. The drinks board features matcha lattes, boba tea and a slate of smoothies, with the owners promising a different smoothie flavor for each color of the rainbow.

Owners And The Name
Happymix is owned and operated by Kevin and Callie Colwick, and the name traces back to Callie’s first business selling pixel art as a child, according to Community Impact. “It’s also a nod to the mix of flavors, people and special moments we hope come together in our shop each day,” Kevin Colwick told the outlet. The couple is positioning the creperie as a casual, drop-in spot for quick bites and meet-ups as they ease into full operations.

Happymix sits at 113 S. Tennessee St on McKinney’s historic square. The shop's homepage lists soft-opening hours as Tuesday through Saturday, 10:30 a.m. to 7 p.m., with a limited menu while the team ramps up. The arrival of Happymix adds another crepe stop to McKinney’s growing café scene, following news that Sweet Paris announced a McKinney location last year and broadened local crepe options.
For now, Happymix is in soft opening and welcoming customers in search of handheld crepes, matcha drinks and boba on the square. The owners plan to grow the offerings as they transition to regular hours and introduce seasonal flavors.
