Chef Michael Schulson is bringing his acclaimed izakaya concept Double Knot to Sundy Village in Delray Beach, setting up what looks like a major dining anchor for the new mixed-use campus at 22 West Atlantic Avenue. Permit activity and leasing moves are stacking up, and the project is about to get a high-end sushi and robatayaki player in a development already wooing big-name national and regional restaurants.
Schulson and his team have filed permit applications with the Florida Department of Business and Professional Regulation to open a Double Knot at 22 W. Atlantic Avenue, according to What Now. The outlet reports that no specific opening date has been set yet, and that Schulson Collective, the chef's restaurant group, will operate the Delray Beach location.
Where It Will Land
Sundy Village is a seven-acre campus at the corner of Atlantic and Swinton avenues that has been pre-leasing aggressively. Phase One delivered roughly 100,000 square feet of Class A+ office space and about 30,000 square feet of retail and dining, along with 268 below-grade public parking spaces, according to the developer. Pebb Capital and local reporting note that the project has already inked several tenants, including Barcelona Wine Bar and Van Leeuwen Ice Cream. The development mixes new construction with restored historic homes and is being pitched as a gateway into downtown Delray Beach.
What Double Knot Serves
Double Knot is known for sushi, sashimi and robatayaki, with charcoal-grilled skewers of meats, seafood and vegetables, plus a value-focused chef's tasting menu that sends out 10 courses capped with a signature soft-serve dessert, according to reviews. The Infatuation and Miami New Times highlight the menu's mix of izakaya-style snacks, nigiri and larger robata plates. Schulson first turned Double Knot into a Philadelphia favorite, then brought the concept to Wynwood in 2025 as part of his broader South Florida push.
When To Expect It And Why It Matters
Phase One of Sundy Village received a temporary certificate of occupancy in October 2025, and restaurants have begun interior buildouts, with openings expected on a rolling schedule through the first half of 2026. The South Florida Office Brokers Association reports that the campus is largely leased and that new eateries will help activate the project's courtyards and walkways. For Atlantic Avenue, the arrival of chef-driven concepts like Double Knot could deepen the corridor's dining cachet and pull in more weekday foot traffic from the new office crowd.
Schulson's team has not set an exact opening date. The next round of public clues is likely to show up in permit approvals, build-out filings and staffing notices. What Now first spotted the state filings, while developer updates point to a rolling series of openings as Sundy Village fills in. A formal announcement and menu reveal from Schulson Collective is expected to land before any soft opening.
