The team plans to pour everything from traditional lattes and cocktails to nonalcoholic sips and THC options, all out of a converted auto shop that is currently in full buildout mode. Crew updates from the space have been rolling out as they inch toward an official opening date.
Nikki Velazquez is the founder and co-owner behind Plot Twist, with Queen City News also naming Sarah Woods as the assistant general manager. As reported by Queen City News, Velazquez is aiming to create a welcoming neighborhood "third space" where regulars can linger morning or night.
Inside the concept
The 1,627-square-foot former auto garage will keep some of its industrial bones while layering in softer design touches; it is expected to seat about 50 people indoors and around 30 on a dog-friendly patio, according to What Now Charlotte. The beverage program centers on coffee and cocktails that share base ingredients so many drinks can be easily reworked into mocktails or THC versions, Axios Charlotte reports. Designers Blaire Chastaine and Amber Cagle are credited on the renderings, and instead of a full kitchen the owners plan to host rotating food pop-ups.

Plot Twist is setting up on Lyon Court just steps from Trope Bookshop and Wiloe Home & Gift, joining a string of independent, women-owned spots that have been quietly reshaping the block, as reported by CLTtoday. Construction progress has been playing out publicly, but a firm opening date is still to be announced, with the team steering would-be regulars to social media for the official word.
Early menu teasers include a signature ube-coconut drink that the crew says can show up as coffee, matcha, a mocktail or a cocktail. The brand has been leaning on the motto "there is no wrong time for the right drink" in its messaging, per Queen City News.
