With this opening, the brand’s all-day breakfast and speedy Cuban plates land right in the middle of Sunset Drive’s busy restaurant row.

According to Bored Cuban, the South Miami location is slated to open daily from around 7:30 a.m. to 9 p.m. The shop will serve all-day breakfast alongside signature items like pixas (Cuban flatbreads), the 305 Bowl and a lineup of bakery pastries. The menu leans into classics such as palomilla steak, vaca frita and lechón asado while giving them fast-casual tweaks, with specialty cafecitos built for counter service and takeout. Expect coffee, grab-and-go pastries and a tight list of plate options geared toward quick neighborhood dining.
Owner and local roots
Founder Eric Castellanos, the operator behind Latin Cafe 2000, says the concept started as a lighthearted idea that took off, with some inspiration from a Bored Ape NFT he owns, as the brand expanded from a Le Jeune location in 2024 into other Miami neighborhoods, according to What Now Miami. Castellanos and his family-run operations have been quickly adding locations, and the South Miami restaurant marks the third Bored Cuban in the metro area. That homegrown growth helps explain the blend of nostalgic Cuban comfort food and the brand’s quirky, eye-catching visuals.
Art, mascot and opening day
Per Miami Herald, the South Miami outpost will be splashed with murals by Miami artist Friks84 and anchored by a life-size version of the chain’s ape mascot, Manolo, modeled on Castellanos’ NFT. The Herald also notes the official ribbon-cutting is locked in for 3:05 p.m. on Thursday, with the first 100 attendees picking up a free 305 Bowl. The art-heavy space is clearly designed to double as an Instagram backdrop while still functioning as a neighborhood-minded ventanita-style alternative.

The shift from a decades-old sushi spot to a fast-casual Cuban concept underscores how the corridor is changing with new residents and increased foot traffic. For now, the setup appears geared toward quick, counter-service visits rather than full-on sit-down meals.
South Miami diners eyeing the ribbon-cutting will want to show up early if they hope to snag one of the free bowls; otherwise, the spot simply adds another low-key Cuban option along Sunset Drive.
