As reported by What Now, the Apollo Beach restaurant is expected to feature wings, ribs, salads, artisan flatbreads and handhelds such as a smoked pulled-pork sandwich. The ownership group describes the concept as “a unique upscale/casual family-friendly sports restaurant/bar.” The What Now piece also notes the brand’s launch in Palmetto and its expansion into Lakewood Ranch, and highlights The Greyson's Instagram presence as a main source of pre-opening teasers.

Founders Tom Halkidis and Russell Matthes opened the first Greyson in Palmetto in 2023, followed by a Lakewood Ranch location the next year, Your Observer reported. Large indoor seating, a dog-friendly patio and plenty of TVs have helped The Greyson build a steady neighborhood following at its existing spots.

Industry outlet Business Debut reported that co-owner Russell Matthes said the team had been targeting a second-week-of-March opening for the Apollo Beach buildout, with that schedule still tied to contractor timelines. Business Debut also described plans for a roughly 3,500-square-foot interior with about 160 seats and a patio of around 600 square feet. Locals eager for a firm opening date are being pointed to The Greyson's website and social media channels, where the official announcement is expected to land first.
