San Antonio's Star Wars-themed coffee truck Galactic Grind Coffee said Wednesday it is taking its weekend cult following to a permanent cafe on San Pedro Avenue this summer. The truck, decked out with life-size Stormtroopers, helmets and other collectibles, has become a north-side weekend draw since launching in December 2025.

Owners Jens and Neda Schleicher told KENS5 they plan to convert a San Pedro Avenue spot into a brick-and-mortar outpost. Jens, who moved from Germany in 2022 and has worked as an artist and editor for the official Star Wars magazine, assembled much of the truck's collection himself. "Galactic Grind Coffee is from fans for fans," Jens said, and the couple told the station the operation runs with a three-person crew and gets busiest on weekends.

Menu and service

The truck's best-selling drinks are the Light Side Latte, the Dark Side Latte and a Biscoff Latte, and the stand usually closes by early afternoon on weekdays. Customers can also order for delivery and pickup through local platforms, and the business appears in regional delivery listings and directories, including Uber Eats and Yahoo Local.

From truck to storefront

The Schleichers told KENS5 they expect the San Pedro cafe to open by summer and to keep the truck's pop-culture styling while adding indoor seating and extended hours. The planned location is on the north side near other small businesses and gyms, where the truck currently parks at 12223 San Pedro Ave.

Why it matters

San Antonio has seen a string of food-truck concepts land permanent storefronts in recent years, a move owners say can stabilize revenue and build regulars.
