Nguyen told the Chronicle, “We felt like Houston needed one,” and the partners plan to add pho and bánh mì a few days after the grand opening.

The Houston menu leans into showmanship without scaring off everyday coffee drinkers. The Houston Chronicle reports that this Bellaire shop is the first sit-down Trung Nguyen Legend café in Texas and notes that co-owner David Ho backpacked across Vietnam to test dishes before returning to help run the space. The owners say the Bellaire storefront has already turned into a gathering spot for Houston’s Vietnamese community and curious coffee fans who are in no hurry to give up their seats.

Trung Nguyen Legend is part of a 30-year-old company that says it operates roughly 1,000 locations worldwide and is planning additional U.S. openings, according to Trung Nguyen Legend. The Bellaire outpost will serve as an early test of how theatrical Vietnamese-style coffee plays in Houston, and the owners say they hope it evolves into a kind of neighborhood living room, the sort of place where people linger over long cups of coffee and steaming bowls of pho.
